HEB’s hearth-plate oven was running uneven: control side and non-control side at visibly different temperatures, with the damper run open as a workaround. Hank Pickering and Morgan Henry were on site for two days: baseline mole runs across three zones, burner balance, ignitor and flex-hose and gas-line repairs, and coloraider re-positioning. By the afternoon of day one, production was back up. The result: full bake throughout, ~8% moisture, minimal color variance.
