Do you service ovens you did not build?
Yes. Our anchor case study is a Baker Thermal hearth-plate oven at HEB in San Antonio. We assess and repair the equipment in front of us, whoever's nameplate is on it.
What is a mole run?
A data logger travels through the oven on the belt, exactly as product does, recording temperature the whole way. It shows you the bake the dough actually sees across each zone, which is often not what the oven's own thermocouples report.
Can you fix an uneven bake?
That is the core of the work. At HEB we baselined and balanced the oven across three zones, corrected the ignitor, flex hose, and gas line, and repositioned the coloraiders. The result was full bake throughout at roughly 8% moisture with minimal color variance.
Do you still manufacture bakery equipment?
Yes. The OEM side of The Henry Group builds baking systems. This site covers the field-service division; equipment manufacturing lives on our main site.
